OLIVE OIL
A special thanks to Lake Garda as its climate contributes to the production of Olive Oil. Lake Garda Olive Oil is a mix of harmonious aromas (fresh grass, artichoke, herbs and hay) which expand into a delicate almond taste, with a slightly sharp and spicy hint.
Olive Oil producers of the three regions around Lake Garda (Lombardy, Veneto and Trentino) have grouped together and formed a Consortium to defend the extra virgin olive Oil "Garda" DOP. Its purpose is to carry out several checks therefore guranteeing the origin of the extra virgin olive oil Garda DOP.The Consortium along with other organizations assess the procedures in order to obtain the certified quality.
There are different varieties of olive trees on Lake Garda in the Lombardy region: 55% are Casaliva, Frantoio and Leccino. The olives are picked by hand or with mechanical machines and then brought to the several oil mills present around the lake. Lake Garda is the place where olive oil is produced at the highest northern latidude in the world thanks to the lakes' climate.
Many historical documents, starting from the Middle Ages to writers such as Catullo, Goethe and D'Annunzio witness a high presence of olive oil trees on the land touched by Lake Garda.
The olive oil is ideal straight from the bottle either on warm or cold meals. It perfectly combines with delicate meals enhancing their aromatic taste. Good with steamed fish, from the lake and from the sea, white meat, raw meat (carpaccio) and fish, to season bresaola and salted meat, salad, vegetables and vinaigrette.
